Black Fungus 5 Course Meal Recipe Series : Entree Fried Egg With Black Fungus

Entree: Fried Egg with Black Fungus

Chinese name: 木耳炒鸡蛋 (mù ěr chǎo jī dàn)

Fried Egg with Black fungus is a delicious entrée as the eggs fluffy and provide textural contrast to the crispy black fungus.

This home-style dish can be prepared year-round, since its ingredients are always available. Black fungus is rich in 
  1. Protein, 
  2. Vitamin E
  3. Iron, and 
  4. Has a reputation in Chinese herbal medicine for improving circulation. In addition to the nutritious egg, this is really a health-preserving dish.
  1. 200g soaked black fungus or your own freshly grown pesticide-FREE Black fungus
  2. 2-3 eggs
  3. 1 carrot
  4. chopped green onion
  5. pepper powder
  6. salt
  7. sesame oil
Note: The amounts above can be adjusted according to one's personal taste.

  1. Soak the dry black fungus in cold water for 20-30 minutes until they fully expand or use fresh pesticide-FREE Black fungus that you grown yourself. Clean them well, and trim off the stems with scissors. Tear them into small pieces, and set aside.
  2. Wash and peel the carrot, and then cut it into thin diamond-shaped slices. Place onto a plate.
  3. Crack the eggs into a bowl or a small basin. Beat it up.
  4. Heat some oil in the wok and add the beaten eggs. Stir-fry for a few seconds until the eggs set. Turn off the heat, remove the eggs and set aside.
  5. Heat some more oil and add the green onions and stir-fry for ten seconds until fragrant. Add the carrot slices and black fungus and stir-fry over high heat for about one minute. Add the salt and pepper and cook another twenty seconds. 
  6. Turn the heat to low, add the eggs and stir-fry for another thirty seconds.
  7. Turn off the heat, remove the contents from the wok and serve on a fine porcelain plate.

In this post, we will share with you how to prepare one delicious and simple to prepare Appetizer with total time of ONLY 10 mins (5mins for preparation and 5 mins to cook)

Black Fungus Refreshing Salad Recipe

Appetizer: Black Fungus Refreshing Salad

  • 1 1/2 cup rehydrated wood ears(refer to foot note 1) or fresh mushrooms(can be even your own planted), washed and cut into bite sized pieces
Own grown fresh pesticide-free black mushroom using Moku-moku DIY Mushroom Box.

  • 2 tablespoons light soy sauce
  • 2 tablespoons Chinkiang vinegar (or other Chinese black vinegar)
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 1/2 green bell pepper, sliced
  • 1/3 red bell pepper, sliced
  • 1/3 yellow bell pepper, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup almond, smashed

  1. Bring a medium-sized pot of water to a boil. Add wood ear mushrooms and cook for 2-3 minutes (*see footnote 2). Turn off heat and transfer wood ears to a colander. Rinse with tap water and drain. Set aside.
  2. Combine light soy sauce, Chinkiang vinegar, sugar, and sesame oil in a small bowl. Stir well.
  3. About 10 minutes before serving (*see footnote 3), add wood ear and all the bell peppers into a large bowl, pour in sauce, and top with cilantro and smashed almonds.
  4. Mix well and serve as an appetizer or a side.

(1) You can use dried wood ear mushrooms. For rehydrating wood ears, soak dried wood ears in warm water for 1 hour or in cold water overnight. The texture of the wood ears will be better if rehydrated in cold water for over 6 hours. However, using the fresh black fungus that you grown yourself will be a whole new experience.

(2) It always safer to slightly cook wood ears before serving. Although rehydrated wood ears are edible, the sometimes contain dirt and could have been polluted during the dehydration process. Boiling will help sanitize the wood ears without changing their texture or flavor.

(3) Bell peppers will taste better after soaking in the sauce. However, if you mix in the sauce too early, the bell peppers will lose water and dilute the sauce.
